Green Lightning Shrimp with Grilled Pineapple Salsa & chips

Oh yes! Great combo here, Grilled Pineapple Salsa with Grilled Chips! and HOT Green Lightnin’ Shrimp!
The shrimp were marinaded for a few hours in lime juice, cilantro, roasted jalapenos with seeds, scallions, chopped garlic, salt, black pepper, and cumin! Then grilled to a sizzling perfection and then after plating we drizzled a cilantro and garlic butter over them. Mmmmmmmm.
The Salsa ROCKED! Everything was roasted on the grill, red pepper, pineapple, green onion, cilantro, jalapenos. Then chopped up and pulsed added the special ingredients Garlic, Mint & Candied Ginger! Then pulsed it all again then chilled it.
Never grilled my own fresh tortilla chips before. If you try it you have to take care they can burn fast so watch um’. I made them crispy on one side so they had a nice texture.
The Shrimp had a lot of heat on them ( I put in extra seeds hehe) and it went so well with the sweet salsa. Oh by the way grilled pineapple is absolutely wonderful.
