Poblano Burgers & Fixins

For my first battle I made burgers with roasted poblano peppers, queso fresco and a roasted poblano sour cream sauce. The fixins are roasted corn off the cob in a chipotle lime butter and plantain chips with fresh salsa.

For the burgers I mixed in cilantro, roasted poblano peppers, shallots, cumin, mexican oregano, a smoked Chihuahua sea salt and they are coated in cracked pepper. There may be some lime juice in there too.

My wife says the poblano sour cream is good enough to eat by the spoonful, but the corn is too spicy. I may have overdone the burgers a bit too. Don’t hold it against me.

The corn recipe is from eatingwell.com and the plantain chips from epicurious.com. The burgers, salsa and poblano sour cream are all mine.

This was a pretty good meal I only wish more people could have been here to partake. That way everyone would sing my praises as the grill master extraordinaire for years to come.

I love to grill. Mostly because it gives me less dishes to do. If I wasn't a designer I'd go to culinary school. I'm a big fan of food and especially burgers. My restaurant test is usually the burger. If they can make a good one then the rest is probably good too. Flawed psychology I know, but hey, I love burgers. Oh and I suck at keeping up with my recipes. My measuring technique is "a little of this and a little of that". Seems to be working well for me so far.
